Homemade Fried Chicken

1 whole frying chicken cut up, or individually packaged chicken parts

2 1/2  cups all purpose flour

3 tablespoons seasoned salt

2 teaspoons black pepper 

2 cups milk

vegetable oil and butter

 

Separate chicken parts and rinse thoroughly with water; place in bowl.  Combine flour, seasoned salt and pepper in medium bowl until well mixed together. In separate bow, aded milk; set aside.

Add vegetable oil and butter to pan- about 1 or 2 inches of oil in large frying pan.

Take individual parts and dip in milk for about 1 minute, then coat with flour mixture and put in frying pan. Cover frying pan and turn chicken about 20 minutes into cooking., Continue cooking until golden brown. PLace on serving platter.

Makes about 5-7 servings.

Perfect compliment to this is a side of cole slaw or potato salad.

 

 

Approximate cooking time is about 35 to 50 minutes.

 

Chicken Tenders

1 to 2 lbs skinless and boneless chicken breasts, cut into strips

Flour/salt/pepper

Vegetable oil/butter

 

Mix dry ingredients until well combined.

Heat oil and butter in medium to large frying pan.

Dip chicken strips in milk and then roll in flour mixture until well coated.

Place carefully in hot oil and cook until golden brown on both sides; about 5-6 minutes.

Great served with french fries or cole slaw.

 

Chicken Salad

2 6-8 oz cans chicken, drained

1 stalk celery, finely chopped

1/2 medium onion, finely chopped

1/2 green bell pepper, finely chopped

1 tablespoon sweet pickle relish

1-2 tablespoons mayonnaise

 

Add all ingredients  in medium sized mixing bowl and mix well. Chill at least 1 to 2 hours before serving.

Enjoy!

Serving suggestion: Hollow out tomatoes and add chicken salad to the tomatoes. Serve on a bed of lettuce and carrot sticks and pickles if desired!!
