Chefs Salad
1 head iceberg lettuce, or 1 package prepared salad mix
1 medium tomato, chopped
1 medium onion, sliced thinly
1 medium carrot, shredded
2-3 hard boiled eggs, sliced into quarters
4-5 thin ham, turkey or beef slices, sliced thinly
croutons
Cheese, any kind
Add lettuce or prepared salad mix in large bowl. Add tomato, onions, carrots, eggs, cheese and meat . Toss together until thoroughly tossed together.
Add additional hard boiled egg wedges as garnishes. Add croutons and your favorite dresssing. Enjoy!
Great as a side or as a meal.
Tuna Salad
1 to 2 can chunk light tuna, drained
1 medium onion, chopped
1 stalk celery, chopped
1/2 green pepper, chopped
2 hard boiled eggs, chopped
Mayonnaise
Flake the tuna into a medium mixing bowl. Add the onion, celery, green pepper and hard boiled eggs; mix thoroughly.
Add 2-3 tablespoons mayonnaise and mix until thoroughly combined. Cover bowl with plastic wrap and place in refrigerator until thoroughly chilled.
For a special treat, stuff 2 to 3 hollowed out tomatoes with tuna mixture on a bed of lettuce.

A variation of this recipe is that if you want to make chicken salad, just substitute 1-2 cans chicken instead of tuna.
Tossed Salad
1 head iceberg lettuce, or 1 package prepared salad mix
1 tomato, chopped
1 onion, chopped
1 medium cucumber, sliced
1 green pepper, chopped
Cheese, any kind
Tear lettuce or add 1 package of salad mix in medium bowl. Add vegetables together and toss thoroughly.
Add croutons, cheese and your favorite salad dressing. Enjoy!!!
