Homemade Chocolate Fudge
2 cups granulated sugar
1/2 cup cocoa powder
1 cup whole milk
1 1/2 teaspoons pure vanilla extract
3 tablespoons butter or margarine, softened
Combine sugar and cocoa; mix until thoroughly combined. Add milk and dry ingredients to medium saucepan; cook on medium to high heat until mixture starts to boil; stir frequently to prevent mixture from burning.
Cook until mixture reaches hard ball stage-add a spoon of the mixture to a cup of cold water until it forms a ball; remove from heat.
Place pan in some cold water, the quickly add the butter and vanilla; stir quickly. Pour mixture onto cool buttered dish and refrigerate until firm.
Serves about 5 to 7 people.
Rice Krispies Treats
8 cups Rice Krispies cereal
1 large jar Marshmallow cream
1 bag semi-sweet chocolate chips
Dash of salt
Combine all ingredients in large mixing bowl until well combined.
Spread mixture on large baking sheet lined with parchment paper and refrigerate until firm-about 2 hours.
Cut into medium or small sized squares.
Serves about 6-8 people or an army of hungry kids!!!! Yum-Yum!!!!
Butterscotch Pie
4 cups light brown sugar
1 1/2 cups granulated sugar
4 eggs, separated
2 cups milk
2-3 tabelspoons corn starch (for thickening)
Combine the dry ingredients until well blended.
Separate eggs, adding egg yolks first; then add milk and stir until thoroughly combined.
Cook over medium to medium high heat over a double boiler until mixture starts to thicken; about 20 to 30 minutes.
Add mixture to graham cracker crust, and put in refrigerator to cool; about 1 to 2 hours or until firmly set.
Beat egg whites until it reachs soft peaks.
Spread over top of mixture and put under broiler for about 2 minutes until the top starts to brown.
Cool about 20 minutes; serve.
Serves about 8.
